Chocolate Hot cross buns
Our Easter fav! Coz you never have to miss out!
-1 cup almond meal
-1 3/4 cup spelt flour
-1 chia/flax egg (1 tbsp chia seeds 1 tbsp flaxmeal ,6 tbsp water and set for 5 mins)
-2 tbsp coconut sugar
-2 tbsp honey (rice malt syrup)
-1/2 cup warm almond mylk
-1 tsp cinnamon
1tsp fresh grated ginger
-2 tbsp melted coconut oil
-1 large handful of chopped vegan chocolate ( I made my own with coconut oil, cacao , and honey,, or rice malt syrup)
-Add all ingredients into a large bowl and mix well until combined.
-Kneed dough on a floured bench for 2-4mins and then let the dough sit for an hour
- After an hour pre heat oven to 180c
-Roll dough out into a sausage shape and chop into about 8 round pieces and bake for 10-15 mins until golden brown.
