Choc Caramel Raw Cake

Choc Caramel Raw Cake


-- Base
- 1 cup almond meal
-1/2 cup shredded coconut
-1 cup cashews
-1/4 cup pitted dates
-1 tbsp coconut oil
-1/4 cup coconut mylk 
Blend all base ingredients in a high powered blender until combined.
Line a slice tin with coconut oil and coconut flour and press down base into tin. Place in freezer while making caramel.


--Caramel 
-1 cup pitted dates soaked + some of water
-1 tbsp coconut oil
-1/4 cup coconut mylk
-2 tbsp rice malt syrup 
Blend all caramel ingredients in a high powered blender until smooth and pour onto base then return to freezer.

--Choc filling 
-1 cup cashews soaked in hot water for 3h
-1/2 cup cacao powder
-1/4 cup rice malt syrup
-1/4 cupcoconut mylk 
Blend all ingredients until smooth. Pour on top of caramel and set cake in freezer for about 5hrs until set.
Slice it up add a candle and enjoy.
